Cooking time: 20 minutes
Ingredients: 500 g potatoes; 1 bunch of fresh onions; 100 g feta (4 tbsp olive oil, 1 tbsp vinegar, salt and pepper).
•• Peel the potatoes, rinse and dice. Boil for 20 minutes.
• During this time, clean the onions and slice them thinly. Drain the feta and cut into small cubes.
• In the bottom of a bowl, pour vinegar, salt and pepper. Mix, then add the oil into a thin fillet without ceasing to stir.
•• Integrate the onions and feta, mix and let stand until the potatoes are cooked.
• Pour the hot potatoes into the salad bowl and stir. Let cool at room temperature before serving.
